Braised fish in soy sauce is the basic craft of Chinese dish. The distinguishing characteristics are it looks red and glossy, rich in smell thick in juice. Both sides of the fish slice must be fried to become golden yellow, a thin crispy layer of skin should be left on the top before you take it out of the hot oil pot. This is the key step of forming the gloss, or you may have a dish that looks gloomy and gets torn to pieces.
Ingredients:
a). For step 1:
- 4 ~ 5 slices grass carp (or other fish you prefer)
- 1 tablespoon cooking wine
- 1/2 cup soy sauce
b). For step 2:
- 5 slices of ginger
- 1 green onion (scallion). Chop into few pieces.
- 3 tablespoons oil
c). For step 3:
- 4 star anise
- A piece of cinnamon
- 4 teaspoon sugar
- 1/2 cup soy sauce
- 2 cups of water
d). For step 4:
- 2 tablespoons cooking wine
- dash of monosodium glutamate
Method:
- Marinate fish in wine and soy sauce for over 2 hours for best result.
- Heat oil to 80%. Add chopped green onion and ginger. Add fish and fry till golden. Take out fish.
- Add c) to pot, boil it. Then simmer till thick. Pick out star anises. Add a big spoonful of ketchup and boil up.
- Put fish back to gravy from step 3. Add wine. Simmer till it becomes thick.
Cooking time: 20 minutes

Banana fanna fo fanna . . . These banana sandwich cookies will give your taste buds a reason to sing. Fee fi fo manna . . . banana!
Cookie
1 cup butter or margarine, softened
1 cup sugar
1 medium (1/2 cup) ripe banana, sliced
1 egg
1 teaspoon vanilla
2 1/3 cups all-purpose flour
teaspoon salt
cup chopped pecans
Filling
3 cups powdered sugar
cup butter or margarine, softened
1 teaspoon vanilla
2 to 3 tablespoons milk
Directions
Preheat oven to 350 degrees.
Combine butter, sugar, and banana in large bowl. Beat at low speed, scraping bowl often, until smooth. Add egg and vanilla; continue beating until well mixed. Add flour and salt; continue beating until well mixed. Stir in pecans by hand.
Shape dough into 1-inch balls. Place 2 inches apart onto greased cookie sheets. Flatten balls to -inch thickness with buttered bottom of glass dipped in flour.
Bake for 10 to 12 minutes or until edges are lightly browned. Remove from cookie sheets immediately; cool completely.
Combine all filling ingredients except milk in small bowl. Beat a medium speed, gradually adding enough milk for desired spreading consistency. Spread 2 teaspoons filling on bottoms of half of cooled cookies. Top with remaining cookies, bottom-side against filling.

I love kitchen gadgets. Over the years I have scoured the yard sales or scrimped and saved for various items like a curly potato maker, baked potato cooker, rice cooker, food processor, blender, ice cream maker, yogurt maker, snow code maker, well you name it and it has drawn dust in my cabinets. You know the story, get your gadget home and every night your family is eating curly fries and snow cones until finally you receive a petition signed by every neighbor and his dog supporting your family’s decision to ban that contraption!
I want it!
This weekend I removed my egg money jar to see how much change I had saved over the year. I had saved enough to get me one of those vacuum sealer gizmos. I know you have see the informercial, the one where they take a bag of empty aluminum beverage cans and suck the life out of them and seal the bag airtight. When I saw those cans collapsing, I began to drool. I had to have it, I needed it, life wouldn’t be the same without it, and surely you can’t deprive me of it.!
FoodSaver Tips

Do pre-freeze liquid food so that the vacuum does not draw the liquid into the machine. You can fold a paper towel into a thin strip and place three inches below the top of the bag to absorb liquid when in doubt.
Do not vacuum soft fruits, such as berries without pre-freezing.
Do snip the corner of the bag before you microwave it.
